2005 Essencia Chardonnay Opou Vineyard 375ml

Only in a very good harvest does nature allow us to make an interesting sweet wine. The grapes for this wine were harvested from our Opou Vineyard, in excellent conditions, from totally shriveled, botrytis-infected berries. After pressing and settling, the thick sweet juice was allowed to ferment in small temperature controlled tanks. After fermentation the young wine was transferred to new French Oak barriques and aged for 6 months.
The wine has aromas of honey, raisins and apricots, with a smoky wood characters coming through from the special casks.
Made in a style that is very drinkable now it will still keep for a long time and during this period will intensify in colour and depth of flavour. In it's youth it is suitable with fresh fruits or dried apricots and nuts. After one year it will be excellent with an apricot tart. And after a year or two a ripe blue cheese will make a delicious accompaniment.
Also a limited quantity of 750ml size bottles are available, it would make for a perfect finale to a dinner party. Contact us for details.
